Cucumber processing equipment

Choose whole cucumbers, rounds, length-controlled pieces or peeled ingredients before specifying cutters.

Crop guide · Cucumber preprocessing

Start with the retained product

Long fresh-market cucumbers and smaller pickling types impose different support and gap requirements. KRONEN shows cucumber slicing and cutting to length on its GS 10 TTS, and lists cucumber for a GS 10-2 faceted knife. Neither reference is a complete pickling, fermentation or sterilisation line.

Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.

Choose the finished-product route

Whole fresh cucumbers

Inspect → configured wash → gentle surface-water removal → size/quality select → pack.

Retain the agreed skin and whole length; bypass cutting.

Rounds or controlled-length pieces

Wash → trim ends as specified → align/feed → configured slicing/length cutting → inspect → drain → dose.

Agree orientation, end cuts, length distribution and rejected short ends.

Prepared peeled ingredients

Wash → optional configured peel → trim → specified cutting → inspect → portion → downstream process.

Peeling, de-seeding and pickling are separate duties if required.

Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.

Washing: support the full length through washing

KRONEN HEWA 3800 washing machine in a manufacturer process photograph
KRONEN HEWA 3800 · Manufacturer equipment image; general washing-family reference

KRONEN HEWA 3800

General washing-family reference, not a confirmed cucumber installation. Confirm retention, water movement, loading, outfeed and the selected whole or cut-product route.

Check long curved fruit at belt changes and small fruit at gaps. Specify retained skin and the accepted surface finish. The general washer is an equipment-family reference; washing should not be assumed to remove a coating or create a ready-to-eat result.

Include water filling and management, draining, rinse arrangements and cleaning access in the quotation. No chemical dose, microbial reduction or ready-to-eat result is established by a machine image or application list.

Trimming: separate end trimming from optional peeling

KRONEN manual preparation table with blue boards and a central waste chute
KRONEN · Manufacturer workstation photograph; general preparation

KRONEN

Supported manual preparation with separate waste collection. Define acceptable cucumber ends, skin, leaves or caps and useful trim loss before selecting automation.

Define retained length and the accepted skin condition. Whole retail cucumbers may bypass peeling entirely. A manual station illustrates sample preparation, not an automatic cucumber peeler or a guaranteed simultaneous end-cutting setup.

Cutting: match orientation to rounds or length cuts

KRONEN GS 10-2 belt cutting machine and infeed conveyor
KRONEN GS 10-2 · Manufacturer equipment reference

KRONEN GS 10-2

General GS 10-2 cutting reference. Confirm actual cucumber support, input fit and tooling. Compare the pictured model and tooling with the actual arrangement in the film.

KRONEN GS 10-2 faceted knife · Manufacturer tooling reference; eggplant, cucumber and leek listed

KRONEN GS 10-2 faceted knife

KRONEN lists eggplant, cucumber and leek for this faceted GS 10-2 slicing knife. Confirm the actual cutter version, tooling and input; the illustration is not a complete preparation line.

The GS 10 TTS official film specifically demonstrates cucumber slicing and cutting to length. Confirm actual tooling and feed on the offered version. Standard GS 10-2 faceted-knife slicing is a separate reference, not proof that every setup performs both cuts.

Sorting: grade whole fruit and inspect finished pieces

Herbort Inspection Belt 85 · Manufacturer workshop photograph; manual inspection reference

Herbort Inspection Belt 85

Manual inspection reference. Compare product presentation, visibility and separate rejects. It does not establish optical grading, internal-defect detection or automatic colour mixing.

Agree length, diameter, curvature and visible damage before cutting. Check skin tears, joined slices and end pieces afterwards. The manual belt photograph does not establish an optical grader or detection of internal seed quality.

Dewatering: drain whole fruit or prepared cuts

Use supported drainage or a supplier-confirmed method for the selected format. Check slices for clumping, skin damage and carried water. No general basket-spin programme is prescribed for whole cucumbers, and drainage is not a pickling process.

Agree the free-water and damage assessment after a realistic hold, then check the next transfer and doser. Surface-water removal differs from thermal drying, cooking and sterilisation.

Packaging: choose pack length and slice dosing separately

KRONEN FLEX L vertical bagging machine
KRONEN FLEX L · Manufacturer equipment reference; feeding, pack and options need confirmation

KRONEN FLEX L

Packaging-family reference. Confirm the actual cucumber feeder, doser, pack length and seals. It does not establish a punnet filler, shrink-wrapper, bunch packer or every MAP option.

Whole cucumbers may require wrapping or a long supported pack. Slices need a configured doser and seal clearance. A vertical bagger reference does not establish a cucumber shrink-wrapper, brine filler or every vacuum/MAP configuration.

If MAP is proposed, obtain the exact gas-handling hardware, film, seals and distribution brief. A general bagger does not establish a gas recipe, shelf life or every optional configuration.

Prepare a cucumber equipment trial brief

  1. Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
  2. Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
  3. Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
  4. Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
  5. Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.

Questions before choosing cucumber equipment

Does a cucumber cutting demonstration validate a pickling line?

No. It illustrates feed and cutting. Brining, fermentation, filling and preservation require a separate product and process specification.
