Crop guide · Eggplant preprocessing
Start with the retained product
Bring the actual round, long or narrow eggplant variety to the trial. Fruit shape, stem cap and desired skin retention determine preparation and feed. KRONEN explicitly lists eggplant for its GS 10-2 faceted slicing knife. That reference supports a cutting discussion; it does not establish a complete peeled, cooked or preserved product.
Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.
Choose the finished-product route
Whole fresh eggplant
Inspect → configured wash → gentle surface-water removal → grade → pack.
Define retained stem cap and protect skins at transfers.
Skin-on slices or sticks
Wash → trim cap/end → optional pre-size → supported cut → inspect → drain as specified → dose.
Agree skin retention and the desired orientation of long cuts.
Prepared cooking pieces
Wash/trim → peel only if specified → section or dice → inspect → portion → downstream cooking.
Cooking or preservation needs separate equipment and validation.
Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.
Washing: check skin marking and fruit support

KRONEN HEWA 3800
General washing-family reference, not a confirmed eggplant installation. Confirm retention, water movement, loading, outfeed and the selected whole or cut-product route.
Long and round eggplants do not present identically. Trial contact, rolling, outfeed and washing around the retained cap. The general wash reference requires actual fruit confirmation and does not prove a bruise-free result.
Include water filling and management, draining, rinse arrangements and cleaning access in the quotation. No chemical dose, microbial reduction or ready-to-eat result is established by a machine image or application list.
Trimming: define cap removal before optional peeling

KRONEN
Supported manual preparation with separate waste collection. Define acceptable eggplant ends, skin, leaves or caps and useful trim loss before selecting automation.
Set the accepted cap cut and useful neck loss with examples. Retain skin deliberately for skin-on pieces. A preparation table illustrates this decision; it is not a dedicated automatic eggplant peeler or vision stem-removal system.
Cutting: match the faceted knife to actual input

KRONEN GS 10-2
General GS 10-2 cutting reference. Confirm actual eggplant support, input fit and tooling. Compare the pictured model and tooling with the actual arrangement in the film.

KRONEN GS 10-2 faceted knife
KRONEN lists eggplant, cucumber and leek for this faceted GS 10-2 slicing knife. Confirm the actual cutter version, tooling and input; the illustration is not a complete preparation line.
KRONEN explicitly includes eggplant in the GS 10-2 faceted-knife scope. Confirm shape, belt support and tooling for slices. Sticks or cubes need their own configuration; inspect skin tears, crushed centres, cut angle and short ends.
Sorting: inspect before hiding the interior

Herbort Inspection Belt 85
Manual inspection reference. Compare product presentation, visibility and separate rejects. It does not establish optical grading, internal-defect detection or automatic colour mixing.
Sort whole fruit by agreed size, visible damage and shape before cutting. Inspect cut flesh and trim remnants afterwards. A manual conveyor does not establish automated internal-quality detection or an eggplant optical-grading programme.
Dewatering: remove free water with minimal damage
Whole fruit may use drainage or a confirmed air/belt method. Cut flesh needs a separate trial for bruising, useful loss and surface water. No basket spinner is proposed as a default for eggplant, and dewatering is not cooking or preservation.
Agree the free-water and damage assessment after a realistic hold, then check the next transfer and doser. Surface-water removal differs from thermal drying, cooking and sterilisation.
Packaging: support the fruit and the final cut

KRONEN FLEX L
Packaging-family reference. Confirm the actual eggplant feeder, doser, pack length and seals. It does not establish a punnet filler, shrink-wrapper, bunch packer or every MAP option.
Protect the cap and skin in whole-fruit packaging. Cut pieces need a feeder tested for shape, moisture and drop damage. A bagging-family image does not validate a whole-eggplant wrapper, vacuum result or finished shelf life.
If MAP is proposed, obtain the exact gas-handling hardware, film, seals and distribution brief. A general bagger does not establish a gas recipe, shelf life or every optional configuration.
Compare prepared-input presentation on the belt cutter
This is a clearly labelled cutting-family reference. The observed scenes explain supported input presentation across prepared vegetables; they are not an identified chilli or eggplant acceptance run. Use the crop-specific cut brief above to request the correct product, knife and feed demonstration.

- Around 0:34: An operator places prepared dark-red roots onto the narrow feed belt.
- Around 2:02: Pale prepared vegetable pieces are presented on the same feed path.
Current manufacturer links and source identity were checked. Confirm the offered version and configuration separately from historical demonstration footage. Original English watch notes provide a text alternative; no full transcript is reproduced. Playback is on YouTube. No crop capacity, yield, cleaning, damage or shelf-life guarantee is inferred from the film.
Prepare a eggplant equipment trial brief
- Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
- Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
- Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
- Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
- Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.
Questions before choosing eggplant equipment
Does a slicing-knife listing prove every eggplant cut or peeling route?
No. Slices, long sticks and dices require different input and tooling decisions. Peeling is a separate duty if the product specification requires it.
