Crop guide · King oyster mushroom preprocessing
Start with the retained product
King oyster mushrooms have a substantial edible stem. Removing a dirty growing base does not mean discarding that stem. Ming Chun links a king-oyster cutting film showing thick pale pieces at discharge. Xinhai separately lists a mushroom slicer: these are different machines, not one verified combined line.
Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.
Choose the finished-product route
Whole mushrooms
Trim unwanted base → inspect → clean as agreed → grade → pack.
Retain edible stem and accepted cap.
Discs or long slices
Prepare → orient across or along stem → slice → inspect → pack.
Orientation changes the product form.
Dice
Prepare retained tissue → confirmed dicing → inspect → dose.
A slicing film does not establish every attachment.
Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.
Washing: select the actual cleaning route

KRONEN HEWA 3800
KRONEN washing-family reference, not a confirmed king oyster mushroom configuration. Agree whether a wet route is needed, then trial retention, movement and supported discharge.
Inspect growing-base debris before selecting dry cleaning or wet preparation. The general washer image is only a layout reference. Trial stem support and scuffing if washing is needed; it is not a required step for every whole fresh product.
Include water filling and management, draining, rinse arrangements and cleaning access in the quotation. No chemical dose, microbial reduction or ready-to-eat result is established by a machine image or application list.
Trimming: trim only the unwanted base

KRONEN
KRONEN supported manual preparation with separate waste collection. Define retained king oyster mushroom tissue before selecting automation; this is not an automatic trimmer.
Agree the boundary between substrate-facing tissue and edible stem. The manual station supports preparation and waste collection. Trial offered automation with actual diameters and curvature; automatic boundary recognition is not inferred.
Cutting: compare transverse discs and longitudinal slices

Xinhai
Xinhai mushroom slicer photograph. It is separate from the Ming Chun demonstrations; confirm actual species, support, orientation and supplied tooling.
Ming Chun links king-oyster cutting footage; the inspected discharge contains stout white slices with brown cap tips. Specify orientation and retained cap. The Xinhai photo does not show the filmed model, and slicing evidence does not establish dicing tooling.
Sorting: grade whole stems and pieces differently

Herbort Inspection Belt 85
Herbort manual inspection reference. Arrange actual king oyster mushroom surfaces for viewing; no automatic turning, optical grading or internal-defect detection is inferred.
Check shape and visible damage on whole products, and cut faces and fragments on slices. Present both sides where required. The manual belt does not establish internal scanning or texture grading.
Dewatering: drain wet slices with suitable support
Evaluate residual liquid after holding on a chosen wet route. Thick discs and long slices transfer differently. No generic leafy spin setting is prescribed; thermal drying remains separate.
Agree the free-water and damage assessment after a realistic hold, then check the next transfer and doser. Surface-water removal differs from thermal drying, cooking and sterilisation.
Packaging: choose support and dosing for the stem form

HOPAK B Type
HOPAK lists button, shiitake, oyster, enoki and king oyster applications. This machine-family reference requires the actual product, tray, feeder and seal trial.
HOPAK lists king oyster in its wrapper applications. Trial whole stems, aligned slices or portion trays with actual film and spacing. The reference does not establish automatic orientation, dose control or MAP shelf life.
If MAP is proposed, obtain the exact gas-handling hardware, film, seals and distribution brief. A general bagger does not establish a gas recipe, shelf life or every optional configuration.
Inspect thick king-oyster pieces at the slicer discharge
Ming Chun links this king-oyster cutting demonstration. Compare orientation and retained edible stem. The separate Xinhai equipment photo is a different manufacturer reference; no model equivalence, every cut option or measured yield is established.

- Around 0:12: Stout white slices with brown cap tips collect in a blue bin below the slicer.
Current manufacturer links and source identity were checked. Confirm the offered version and configuration separately from historical demonstration footage. Original English watch notes provide a text alternative; no full transcript is reproduced. Playback is on YouTube. No crop capacity, yield, cleaning, damage or shelf-life guarantee is inferred from the film.
Prepare a king oyster mushroom equipment trial brief
- Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
- Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
- Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
- Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
- Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.
Questions before choosing king oyster mushroom equipment
Should the thick stem be removed like a tough shiitake stem?
Do not transfer that assumption. Define the retained edible stem and trim only unwanted base material. Stem retention and cutting orientation are central to this route.
