Leek processing equipment

Compare whole trimmed leeks, retained shanks and cross-cut ingredients before specifying the line.

Crop guide · Leek preprocessing

Start with the retained product

Define how much white shank and green leaf the buyer retains. Whole retail leeks need supported trimming and washing; loose rings need a separate cutting and water-removal brief. FERMAQ lists a leek handling line, while KRONEN explicitly lists leek for its GS 10-2 faceted slicing knife. Neither listing establishes your trim yield or cleaning result.

Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.

Choose the finished-product route

Whole trimmed leeks

Receive → trim roots/tops → wash retained layers → inspect → drain → bunch or pack.

Keep the specified green length and avoid a ring cutter on this route.

Prepared shanks

Pre-clean → trim to retained length → inspect layers → final wash → drain → portion.

Agree whether splitting or removing outer leaves is permitted.

Rings or short sections

Pre-clean → trim → align/feed → cross-cut → wash/separate → dewater → dose.

Define ring separation, retained green content and cut samples.

Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.

Washing: reach soil between retained layers

KRONEN HEWA 3800 · Manufacturer equipment image; general washing-family reference

KRONEN HEWA 3800

General washing-family reference, not a confirmed leek installation. Confirm retention, water movement, loading, outfeed and the selected whole or cut-product route.

Compare whole-shank washing with washing after splitting or cross-cutting. Specify access to layered joints, soil loading, root debris and retained leaf length. A general HEWA image illustrates water handling; it does not prove clean interiors in intact leeks.

Include water filling and management, draining, rinse arrangements and cleaning access in the quotation. No chemical dose, microbial reduction or ready-to-eat result is established by a machine image or application list.

Trimming: set root and top cuts independently

KRONEN · Manufacturer workstation photograph; general preparation

KRONEN

Supported manual preparation with separate waste collection. Define acceptable leek ends, skin, leaves or caps and useful trim loss before selecting automation.

The manual workstation shows supported trimming and a separate waste path. Define root removal, outer-leaf stripping and the white-to-green balance. A complete leek line needs actual shank-length support and collection, not just a cross-cutting machine.

Cutting: align shanks for the required rings

KRONEN GS 10-2 belt cutting machine and infeed conveyor
KRONEN GS 10-2 · Manufacturer equipment reference

KRONEN GS 10-2

General GS 10-2 cutting reference. Confirm actual leek support, input fit and tooling. Compare the pictured model and tooling with the actual arrangement in the film.

KRONEN GS 10-2 faceted knife · Manufacturer tooling reference; eggplant, cucumber and leek listed

KRONEN GS 10-2 faceted knife

KRONEN lists eggplant, cucumber and leek for this faceted GS 10-2 slicing knife. Confirm the actual cutter version, tooling and input; the illustration is not a complete preparation line.

The faceted GS 10-2 knife explicitly lists leek. Confirm belt support, orientation and acceptable cut surfaces with thick and thin shanks. Check crushed layers, joined rings, short ends and the proportion of green leaf retained.

Sorting: inspect the retained layers and useful length

Herbort Inspection Belt 85 · Manufacturer workshop photograph; manual inspection reference

Herbort Inspection Belt 85

Manual inspection reference. Compare product presentation, visibility and separate rejects. It does not establish optical grading, internal-defect detection or automatic colour mixing.

Separate size selection from visual soil, damaged leaves and trim quality. Present long shanks without hiding the root-end cut. A manual inspection conveyor is not an optical grader or proof that internal layered defects are detected.

Dewatering: drain whole shanks or dewater loose rings

KRONEN KS-100 PLUS open lid and removable perforated basket
KRONEN KS-100 PLUS · Manufacturer basket-detail photograph; actual crop programme requires a trial

KRONEN KS-100 PLUS

General removable-basket reference for a supplier-confirmed cut-product route. Test actual leek retention, damage and free water; whole products may need supported drainage instead.

Whole leeks need supported drainage and a transfer that does not bend the retained leaves. Loose rings require a trial of the offered basket or continuous method. Check free water, layer separation and fragments after holding and discharge.

Agree the free-water and damage assessment after a realistic hold, then check the next transfer and doser. Surface-water removal differs from thermal drying, cooking and sterilisation.

Packaging: match the pack to long shanks or loose cuts

KRONEN FLEX L vertical bagging machine
KRONEN FLEX L · Manufacturer equipment reference; feeding, pack and options need confirmation

KRONEN FLEX L

Packaging-family reference. Confirm the actual leek feeder, doser, pack length and seals. It does not establish a punnet filler, shrink-wrapper, bunch packer or every MAP option.

Compare bunch support and pack length for whole leeks with the doser for rings. Long green leaves can bridge a hopper or enter a seal. The bagger reference is a starting point; confirm feeder, film and any gas option.

If MAP is proposed, obtain the exact gas-handling hardware, film, seals and distribution brief. A general bagger does not establish a gas recipe, shelf life or every optional configuration.

Follow the leek line from waste removal to manual handling

FERMAQ identifies this as its leek handling line. Compare supported transfers, waste separation and manual inspection. The historical footage does not establish a present-day trim yield, wash result or finished ring-cutting setup.

Prepare a leek equipment trial brief

  1. Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
  2. Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
  3. Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
  4. Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
  5. Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.

Questions before choosing leek equipment

Does a leek washer-cutter also make finished loose rings?

Not automatically. Root/top trimming and cross-cutting are different duties. Confirm both the retained whole-leek specification and the downstream ring-cutting arrangement.
