Crop guide · Wood ear preprocessing
Start with the retained product
Wood ear has folded, flexible fruiting bodies. Fresh harvested ears, dried product and rehydrated ingredients need different handling. Washing, removing attached base material, cutting strips and mincing are separate operations. Fujimarca explicitly names black fungus for a manual grinder; its short film compares whole ears with minced output, not washing, strip cutting or an industrial production line.
Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.
Choose the finished-product route
Whole ears
Inspect → remove unwanted attachment material → configured cleaning → supported drainage → grade/pack.
State fresh or previously rehydrated input.
Strips
Prepare ears → supplier-confirmed strip cutting → separate fragments → drain if wet → dose.
A grinder does not produce the same form as a strip cutter.
Minced ingredients
Prepare clean ears → suitable mincing equipment → inspect texture → portion.
Drying, rehydration and any later cooking require separate process specifications.
Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.
Washing: clean folds without losing useful pieces

KRONEN HEWA 3800
KRONEN washing-family reference, not a confirmed wood ear configuration. Define input condition, retained pieces, water handling and supported discharge in an actual trial.
State input condition, incoming debris and the smallest retained ear. Test water movement, screens, trapped material inside folds and supported discharge. The general washer is a family reference, not a wood-ear configuration. Rehydration is a separate controlled preparation duty; no soaking recipe is inferred from a machine image.
Include water filling and management, draining, rinse arrangements and cleaning access in the quotation. No chemical dose, microbial reduction or ready-to-eat result is established by a machine image or application list.
Trimming: define attachment-point removal

KRONEN
KRONEN supported manual preparation table with separate waste collection. Define retained wood ear tissue; this is not an automatic peeler, leaf stripper or root recogniser.
Show retained ear tissue and unwanted base or growing-medium material. A supported manual table helps separate trim waste. Removing an attachment point is not general skin peeling; a brush root peeler is not specified for flexible ears.
Cutting: choose strips or mince deliberately

Fujimarca MC-806-1
Fujimarca manual grinder family. The photo is the current MC-806-1 cast-iron variant; the short film is labelled MC-806. Confirm offered version, plate and cleanable configuration. It explains mince, not strips or washing.
Fujimarca lists wood ear for its manual grinder family. Its demonstration shows finely divided output beside whole ears; it does not prove strip cutting, uniform dice or industrial throughput. For strips, obtain the actual feeding support and blade trial with wet, slippery folded material.
Sorting: expose folds during inspection

Herbort Inspection Belt 85
Herbort manual inspection reference. Present actual wood ear surfaces for viewing; no automatic turning, species identification or internal scanning is established.
Inspect attachment residues, debris and buyer-defined whole or broken pieces. A pile hides folded surfaces; spread and turn material as needed. The inspection belt assists manual viewing without establishing automatic contaminant detection.
Dewatering: drain the wet product without calling it dried
Check water retained in folds after the planned hold and transfer. Trial supported belt or basket arrangements for the actual cut form. Free-water removal does not make shelf-stable dried wood ear, and dry product packaging needs a different moisture-control brief.
Agree the free-water and damage assessment after a realistic hold, then check the next transfer and doser. Surface-water removal differs from thermal drying, cooking and sterilisation.
Packaging: separate fresh, rehydrated and dried packs

KRONEN FLEX L
General packaging-family reference. Confirm actual wood ear feeding, portion and seals. It does not establish a tray filler, paste filler, gas recipe or shelf-life result.
Specify product condition and intended distribution before choosing a doser. Whole ears can bridge; minced ingredients behave differently. Confirm pack seals and liquid carryover. A general bagger reference does not establish a validated preservation process or a wood-ear shelf life.
If MAP is proposed, obtain the exact gas-handling hardware, film, seals and distribution brief. A general bagger does not establish a gas recipe, shelf life or every optional configuration.
Compare whole wood ears with finely divided output
The official Fujimarca channel identifies a manual MC-806 wood-ear demonstration. It explains a small-scale mincing result, not strips, washing or industrial throughput. The equipment image shows the current MC-806-1 cast-iron variant; confirm the offered plate, material and version separately. Do not reproduce demonstration hand placement as an operating procedure.

- Around 0:04: The vertical film shows whole folded ears beside finely divided material on a plate.
Current manufacturer links and source identity were checked. Confirm the offered version and configuration separately from historical demonstration footage. Original English watch notes provide a text alternative; no full transcript is reproduced. Playback is on YouTube. No crop capacity, yield, cleaning, damage or shelf-life guarantee is inferred from the film.
Prepare a wood ear equipment trial brief
- Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
- Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
- Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
- Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
- Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.
Questions before choosing wood ear equipment
Does a manual wood-ear grinder replace a washing and strip-cutting line?
No. It explains a small-scale mincing option. Washing, attachment removal, strip cutting and industrial handling remain separate supplied duties.
