Assign supply boundaries
- Define trimming, de-boning or other preparation only where required by the actual cutter.
- Agree input geometry, condition, orientation and spacing.
- Identify knife/grid sets, sharpening, spare parts and changeover responsibilities.
- Assign safe access, guarding, cleaning and segregation requirements in the offered installation.
- Define discharge damage and feed conditions for coating, cooking, cooling or packing.
Connect without assuming a universal sequence
Raw-material preparation, cutting and downstream handling vary by food and recipe. A cooked ingredient may be cut after cooking, while another product may be portioned before coating. Agree the real sequence and hygiene programme; a cutting machine does not establish a preservation process.
Questions to settle before a quotation
- Which preparation and transfer modules are included?
- What tooling, access and cleaning scope is actually supplied?
- How will discharge spacing and downstream acceptance be demonstrated?
Ask bidders to state trial material, accepted output, losses, utilities, changeover time and scope exclusions in writing. Compare the offered configuration using the same recipe and acceptance criteria.

Coating & surface treatment
Specify the piece-condition handover.
Frying, steaming & cooking
Define the actual before/after-cooking location.
Conveying & handling
Agree feed and discharge transfers.
Cleaning & hygiene
Assign project-specific changeover requirements.
Include documentation and service in the handover
- Record the offered model/execution and serial number when available. Obtain the correct-language operating/safety manual, electrical drawings, maintenance schedule and document revisions from the supplier.
- Identify knives, grids, wear parts and recommended spares by exact part number, drawing/revision and serial/configuration applicability. Brand identity does not prove parts are interchangeable.
- Agree who installs, commissions and trains operators, what site readiness is required, and how representative product trials and acceptance are recorded. List travel, freight, training and other exclusions.
- Name the legal entity responsible for warranty and destination support. State remote/on-site scope, charges and response terms in the actual quotation; a global service statement is not a local commitment.
