Choose the process and supply boundary

Match oven architecture, carriers and baking acceptance to the actual product mix.

Rack oven: Specify rack and tray dimensions, loading pattern, transfer space and door clearance. Nominal tray count alone is not accepted baked output.
Deck or batch oven: Clarify loading method, independently controlled zones if offered, and product support surface. Evaluate the desired bottom and surface result.
Continuous oven: Specify belt or carrier, residence-time control, product spacing and the interfaces before and after the oven. Do not compare a belt rating directly with batch loading.

Build the product trial

Bake representative products from all intended loading positions and inspect colour, internal result, shape and batch variation.
Record loading, unloading, recovery and cleaning in the schedule, including the change between different recipes.
Confirm electrical or fuel supply, ventilation, heat rejection and any steam provision. Equipment selection alone does not validate a food cooking process.

Compare a complete quotation

Give each bidder the same product, production schedule, installation constraints and acceptance brief. Identify the supplying entity, exact configuration, tools, utilities, transfers, controls, commissioning, training and spare parts. Separate an advertised machine rating from accepted finished output after losses and stoppages. Obtain current price, delivery and service terms in a dated offer.
