Crop guide · Tomato preprocessing
Start with the retained product
Start with maturity, firmness, fruit diameter and the finished presentation. Whole tomato packing should bypass cutting. KRONEN explicitly lists tomato segments for its Tona V, whose rotating holders illustrate why product support matters. Peeling, pulping, concentration and preservation are separate processes rather than automatic features of a fresh-cut line.
Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.
Choose the finished-product route
Whole fresh tomatoes
Inspect → remove unwanted stems → configured wash → surface-water removal → grade → pack.
Define retained calyx and whether truss fruit stays attached.
Fresh slices or wedges
Wash → trim/inspect → supported cutting → collect without crushing → drain as specified → dose/pack.
Compare seed retention, juice loss and acceptable pieces.
Prepared sauce inputs
Inspect/wash → remove unwanted stems/defects → specified size reduction → dedicated downstream process.
Peeling, pulping and thermal processing need a separate engineering brief.
Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.
Washing: support fruit without bruising

KRONEN HEWA 3800
General washing-family reference, not a confirmed tomato installation. Confirm retention, water movement, loading, outfeed and the selected whole or cut-product route.
Compare the proposed wash for actual firmness and maturity. Test fruit contact, water management and gentle collection. The pictured washer is a family reference; a leafy-produce washing arrangement must not be assumed suitable for tomatoes without configuration.
Include water filling and management, draining, rinse arrangements and cleaning access in the quotation. No chemical dose, microbial reduction or ready-to-eat result is established by a machine image or application list.
Trimming: specify stem removal and any peel route

KRONEN
Supported manual preparation with separate waste collection. Define acceptable tomato ends, skin, leaves or caps and useful trim loss before selecting automation.
Set the retained calyx, stem scar and defect cuts before selecting automation. Manual preparation can define acceptance samples. Peeling tomatoes for a cooked product is a different duty from trimming whole fresh tomatoes and needs its own equipment.
Cutting: match holders and inserts to the cut

KRONEN Tona V
Tona V explicitly lists tomato segments. Confirm the required cut and secure holder fit. The listing is not proof of cherry-tomato retention or every small-fruit insert.
Tona V explicitly lists tomato segments. Agree whether the buyer wants slices, wedges or a different format, then confirm holders, orientation and inserts. Check skin tears, crushed flesh, juice and pieces that fail to separate.
Sorting: separate size grades from quality rejects

Herbort Inspection Belt 85
Manual inspection reference. Compare product presentation, visibility and separate rejects. It does not establish optical grading, internal-defect detection or automatic colour mixing.
Inspect firmness and visible damage as well as size, colour and intended grade. The general manual inspection belt does not establish automated firmness sensing or optical grading. Specify where soft or damaged fruit leaves the accepted stream.
Dewatering: remove free water without a leafy spin cycle
Whole fruit and delicate wedges need supported drainage or a supplier-confirmed air/belt method. This guide does not propose centrifuging tomatoes. Evaluate juice loss separately from wash-water carryover and check condition after transfer and holding.
Agree the free-water and damage assessment after a realistic hold, then check the next transfer and doser. Surface-water removal differs from thermal drying, cooking and sterilisation.
Packaging: control drops and preserve cut presentation

KRONEN FLEX L
Packaging-family reference. Confirm the actual tomato feeder, doser, pack length and seals. It does not establish a punnet filler, shrink-wrapper, bunch packer or every MAP option.
Whole tomatoes may need trays, punnets or configured bags; wedges need gentle dosing and seal clearance. The vertical bagger is only a packaging-family reference. Confirm fruit support, calyx punctures, leak control and the exact pack on trial.
If MAP is proposed, obtain the exact gas-handling hardware, film, seals and distribution brief. A general bagger does not establish a gas recipe, shelf life or every optional configuration.
See tomato segments and the interchangeable cutting arrangement
The Tona V film shows a supported cutting family and tomato output. Compare fruit holding, cut geometry and collection. Small cherry-tomato holders are not verified by the film, and maintenance must follow supplier isolation procedures.

Prepare a tomato equipment trial brief
- Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
- Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
- Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
- Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
- Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.
Questions before choosing tomato equipment
Does a tomato wedge cutter provide a complete sauce line?
No. Cutting fresh pieces and producing sauce are different processes. Peeling, seed separation, pulping, cooking and preservation are outside the cutter reference.
