Buyer guide

Retort trials & process evidence

Distinguish equipment distribution testing, product heat penetration and accepted process documentation.

Define the evidence to be delivered

  • Identify the responsible thermal-process specialists and written test scope.
  • Distinguish temperature distribution in the retort/load from heat penetration into the packaged food.
  • Agree the representative product, package, fill and loading cases.
  • Define instrument calibration, data records and review responsibilities.
  • Document process deviations, product disposition and release responsibilities within the accepted programme.

Trial equipment and production acceptance

Allpax describes temperature-distribution and product heat-penetration services as distinct work. A pilot trial supports the tested configuration; confirm how its results will be reviewed for the actual production unit. This purchasing guide does not prescribe a treatment temperature, time, lethality target or validated process.

Questions to settle before a quotation

  • What tests and reports cover the specific installed retort and package/load cases?
  • Who establishes and accepts the product-specific thermal process?
  • How are equipment records, test data and product release kept traceable?

Ask bidders to state trial material, accepted output, losses, utilities, changeover time and scope exclusions in writing. Compare the offered configuration using the same recipe and acceptance criteria.
