Choose the process and supply boundary

Choose portioning by material and acceptance method: dough dividing, depositing or cutting are different operations.

Dough dividing

Define dough condition, portion target and the next rounding or sheeting operation. Weight control and rounding are separate acceptance duties.

Depositing fillings or meals

Specify pumpable or particulate material, hopper feed and placement. A nominal deposit volume should not be assumed to be an accepted net weight.

Cutting solid foods

Define geometry, product variability and weighing or scanning arrangement. Include trim, giveaway, rejects and transfer damage in the trial record.

Build the product trial

1. Weigh consecutive accepted portions using an agreed sampling method; keep start-up and rejected portions visible in the results.
2. Test the smallest and largest intended products with representative ingredient and temperature variation.
3. Agree the handover to trays, forming, cooking or packing, including how underweight portions and stoppages are handled.

Compare a complete quotation

Give each bidder the same product, production schedule, installation constraints and acceptance brief. Identify the supplying entity, exact configuration, tools, utilities, transfers, controls, commissioning, training and spare parts. Separate an advertised machine rating from accepted finished output after losses and stoppages. Obtain current price, delivery and service terms in a dated offer.
