A shape-specific drying system, not just a hot box
This topic covers machines used for drying Italian-style pasta, wherever the equipment is made. It includes equipment for spaghetti and other long goods, short-cut forms, nests and certain specialty products. The starting choice is the pasta form, carrier and batch or continuous workflow—not the nationality of the supplier.
Current manufacturer material shows several architectures. The examples below are a non-exhaustive market sample, not a ranking, a stock list or proof of accepted production performance.
The main dryer architectures
- Small cabinet / frame batch dryer
- Frames or trays are loaded for a batch cycle. Pama's VR/20 and IKE's pasta cabinet offering illustrate this format. Ask for usable carrier area, supported shapes and the complete cycle basis—not just cabinet dimensions.
- Trolley / static drying cell
- Loaded carts enter a drying cell; published Italpast and La Parmigiana configurations include trays or sticks/rods. Short and long pasta need the appropriate carriers. Batch loading is not finished dry output per hour.
- Continuous short-goods dryer
- Italpast describes mesh-belt drying in its automatic short-pasta line; Tecalit separately lists short-pasta equipment. Specify form retention, transfers and whether pre-drying, stabilization and cooling are part of the offer.
- Continuous long-goods dryer
- Bühler publishes long-goods dryers with stick-handling interfaces; GEA's Multidrive is a long-cut production-line example. Hanging transport and stick return need a clear supply boundary.
- Specialty rotary dryer
- Tecalit describes a rotary design for couscous, small pasta shapes and snack pellets. This is a restricted product scope, not evidence that any short pasta or spaghetti can use a rotary dryer.
Heating and dehumidification are a separate selection axis. Manufacturer offerings include electric heating, hot-water/steam arrangements and heat-pump configurations. Heat pump does not identify the carrier, pasta shape or batch/continuous architecture. Compare these choices only for a specified product and installation.
Documented market examples
Manufacturer-published scope checked on 14 October 2026. Names identify catalogue families or line offerings, not ten independently audited factories. Confirm the current regional offer and configuration.
Bühler — Ecothermatik and C-line long-goods dryers
Offering: Continuous long-goods. Published for long pasta. Ecothermatik describes stick transport and exhaust-air heat recuperation; C-line is another documented long-goods family. Neither record establishes a universal short-cut pasta dryer.
Before shortlisting: Specify the offered dryer, stick-handling, cooling and discharge scope. The Ecothermatik detail source is an annual-report-hosted manufacturer product record; current pasta-industry material also names the family. Source record.

Italpast — Static dryers and automatic short-pasta lines
Offering: Batch trolley / continuous short-goods. Static dryers use trays or stick trolleys for different pasta forms. The automatic short-pasta line describes a continuous mesh-belt dryer with separate drying and stabilization zones.
Before shortlisting: Do not confuse the line's vibrating pre-dryer with its main dryer. Confirm heating supply, transfers, cooling and the actual pasta form. Source record.
La Parmigiana — ESS-series dryers
Offering: Batch trolley / cabinet. The published range describes drying cells with carts, trays or rods for short and long pasta, with electric or hot-water/steam heating configurations.
Before shortlisting: Ask which carriers, heating arrangement and product forms are included in the specific ESS offer. Source record.
ITALGI — DRY-series static dryers
Offering: Batch trolley. The DRY4C page documents a static dryer with temperature and humidity control, and electric or hot-water heating options. Its capacity table explicitly uses fresh-product loading as the basis.
Before shortlisting: Fresh-product batch loading is not finished dry output per hour. Confirm carriers, cycle tasks and the offered DRY configuration. Source record.
Pama Parsi Macchine — Static dryers and VR/20 small dryer
Offering: Batch cabinet / static cell. Pama publishes static pasta dryers and a VR/20 small-cabinet example with frames and programmable drying controls.
Before shortlisting: The small dryer article also mentions fresh-pasta surface drying. Specify full dried-pasta production separately from surface conditioning; catalogue cycle and energy claims are not project guarantees. Source record.
Aldo Cozzi — Pasta drying cells
Offering: Batch forced-air cell. The dryer catalogue describes forced-air pasta drying cells with trays or trolleys and electric or hot-water heating alternatives, including short- and long-pasta applications.
Before shortlisting: Confirm the carriers and recipe-specific trial scope. A catalogue mention of filled pasta does not establish shelf stability. Source record.
Tecalit — PDT-HT, TDU-HT, rotary and static dryers
Offering: Long-goods / short-goods / specialty rotary / batch. PDT-HT is described for long pasta; TDU-HT for short pasta, nests and snacks. A separate rotary design is described for couscous, small pasta shapes and snack pellets; static dryers are also listed.
Before shortlisting: Rotary does not mean a universal spaghetti or penne dryer. Match each listed family to its own published product scope. Source record.
Fava Storci — Continuous and discontinuous dry-pasta line ranges
Offering: Integrated production-line offering. The current Fava site presents Fava Storci together and lists continuous and discontinuous dry-pasta lines, including long, short and special pasta types.
Before shortlisting: Count this as one presented brand system here. Ask for the specific drying module and interfaces: a whole-line catalogue is not a standalone dryer specification. Source record.
GEA — Multidrive dry long-cut pasta production line
Offering: Continuous long-goods, integrated line. The Multidrive page describes a dry long-cut pasta production line with pre-drying and drying stages and controlled ventilation and climate management.
Before shortlisting: This is a complete-line offering, not a small standalone cabinet. Confirm which drying, cooling and handling modules are included. Source record.
IKE — Pasta-specific cabinet, drying-room and custom continuous offerings
Offering: Batch / continuous with heat-pump route. IKE's pasta application page explicitly presents commercial cabinet, industrial drying-room and customized continuous pasta dehydrator options, including heat-pump technology.
Before shortlisting: Heat pump is a heating/dehumidification route, not a pasta shape or carrier design. Validate the actual shape, loading accessories and acceptance criteria; no universal energy-saving percentage is adopted. Source record.
Do not mix different supply duties
- Main dryer versus pre-dryer: a vibrating pre-dryer or trabatto may be one upstream stage. Its listing alone does not establish a complete dried-pasta system.
- Drying versus cooling: final cooling, transfer, inspection and packing need separate scope allocation, even when included within a named line.
- Dried pasta versus fresh/filled pasta conditioning: surface moisture removal is a different duty. A dryer listing does not establish a product's shelf life or food-safety process.
- Dryer versus whole production line: GEA Multidrive and Fava Storci line catalogues are not directly comparable to a standalone batch cabinet without separating the modules.
See the dried-pasta process map for ingredient preparation, pressing, drying and packing boundaries.
Make the quotation basis comparable
- Product: recipe, pasta shape, thickness, incoming condition and the carriers proposed for that form. Do not transfer a spaghetti example to penne or nests without a relevant trial.
- Output: ask whether a quoted figure means fresh loading per batch, finished dry product per hour or another basis. Record loading, drying, unloading and changeover tasks; do not turn one basis into another without evidence.
- Quality acceptance: ask for a representative-product trial and agreed tests for drying uniformity, cracking, deformation and cooking quality. Supplier trial results need to identify the actual product and configuration.
- Utilities: state which heating/dehumidification package, ventilation, cooling, power and connections are included. Request measured consumption on an agreed basis rather than comparing unrelated energy-saving percentages.
- Line interfaces: allocate frames, trays or sticks, lifts, return circuits, transfers, discharge and packing handovers. Identify cleaning access and changeover responsibilities.
- Commercial scope: request a dated offer with installation, commissioning, spare parts, training, service region and exclusions. No price, lead time or availability is confirmed in this guide.

Common questions
Can a general food dehydrator replace a pasta dryer?
A general food-drying label is not enough. Ask for pasta-specific carriers, controls and a representative trial. IKE has a pasta-specific application page; that still does not validate every shape or recipe.
Is heat pump another pasta dryer type?
It is a heating/dehumidification route that can accompany different physical layouts. Establish the pasta form and carrier first, then compare the offered utility package and trial evidence.
Which dryer is best or cheapest?
This source review does not establish a universal winner or a current price list. Compare matched product duty, acceptance evidence, interfaces and commercial offers.
Does this page supply a drying recipe?
No. It does not prescribe temperature, time, moisture or water activity, or establish microbial safety or shelf life. Product-specific process development, validation and release responsibility remain separate from equipment discovery.
