Process planning

Confectionery process planning

Define chocolate and hard-candy duties using recipe-specific boundaries and trial evidence.

Choose a distinct production route

Moulded chocolate processing

Plan moulded bars and solid chocolate shapes around the starting chocolate and mould specification.

Enrobed chocolate processing

Plan a chocolate coating around a prepared centre and the required finished coating.

Hard candy processing

Separate syrup preparation, cooking and depositing when specifying a hard-candy route.

Separate duties and production scales

Tempering purchased chocolate, coating centres and cooking sugar confectionery are different tasks. A continuous industrial cooker and a small-batch depositor are individual examples, not a proposed matched line.

Chocolate tempering machines

Match tempering duty to the chocolate formulation and the downstream product format.

Chocolate enrobing machines

Coat a prepared centre using a defined chocolate supply and cooling route.

Confectionery cookers

Specify cooking and concentration around the actual sugar or sugar-free formulation.

Candy depositors

Portion prepared confectionery into the agreed moulds and finished shapes.

Questions to settle before a quotation

  • Where does the offered supply start, and which upstream materials are purchased?
  • How are recipe handling, storage between stages, utilities and cleaning assigned?
  • Which capacity calculation includes rejects, mould handling, finishing and packing?

Ask bidders to state trial material, accepted output, losses, utilities, changeover time and scope exclusions in writing. Compare the offered configuration using the same recipe and acceptance criteria.

Common questions

Is chocolate melting the same as tempering?

They are separate equipment duties. Define the actual formulation and required downstream condition with the supplier.

Does a starch-free depositor imply a complete candy line?

No. Specify cooking, additives, mould handling, cooling, demoulding and packing as distinct supply boundaries.
