Retort package & load selection

Define the food, container, fill and loading arrangement before choosing the retort.

Prepare the packaged-food selection brief

  • Describe recipe variation, inclusions and the product condition at loading.
  • Identify the actual container, closure, fill and package dimensions.
  • Provide basket, tray, layer and restraint drawings for the proposed load.
  • State whether static processing or selected agitation is proposed and why.
  • Agree trial samples, package checks and the process-evidence responsibilities.

Keep food, package and load together

A manufacturer container example is a starting point for a quotation. Changes in food, fill, orientation or loading arrangement need review within the agreed process scope. Compare proposed retorts using the same package and load rather than vessel dimensions alone.

Questions to settle before a quotation

  • What exact package/load range is included in the offer and trial?
  • Who evaluates closure condition, package integrity and product changes?
  • Which instruments and documented process evidence support the selected arrangement?

Ask bidders to state trial material, accepted output, losses, utilities, changeover time and scope exclusions in writing. Compare the offered configuration using the same recipe and acceptance criteria.

China supplier routes: vacuum packaging and bag sealing

Ordinary sealing or chamber evacuation does not establish retort suitability. Confirm the package construction, seal and load as part of the separate validated thermal process.
