Crop guide · Lemon preprocessing
Start with the retained product
Lemon equipment should follow the part being sold: intact fruit, coloured zest, peeled flesh, slices or juice. These products require different removal depths and supports. PND describes citrus zest removal; JBT lists lemons in its extraction scope. The official lemon sorting film explains intact-fruit handling; it is separate from zesting and extraction.
Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.
Choose the finished-product route
Whole fresh fruit
Receive → inspect → configured washing → grade → remove surface water → pack.
Peeling, cutting and extraction are bypassed.
Prepared peel or flesh
Clean whole fruit → define retained peel, pith or flesh → prepare/cut → inspect → portion.
Zesting and complete peeling make different products.
Juice preparation
Clean → size/present for the selected extractor → extract → separate peel, seeds and pulp as specified.
Finishing, preservation and liquid filling are separate downstream duties.
Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.
Washing: clean the surface before opening the fruit
If the rind becomes an ingredient, include it explicitly in the incoming-material and cleaning specification. Compare brush contact, soil removal and the actual elongated fruit shape. Document the proposed rinse and cleaning access; a grading photograph does not establish a cleaning result.
Trimming: specify which part of the peel is retained

KRONEN
KRONEN manual preparation workstation. Use accepted lemon samples to define retained tissue and waste; this is not an automatic peeling or destemming system.
Show accepted coloured zest and the permitted white pith. PND ZESTCRAFT describes controlled surface peeling with adjustable tools. Removing zest does not automatically remove all rind or produce peeled segments; full peeling needs its own retained-flesh brief.
Cutting: choose slices, segments or extraction

KRONEN GS 10-2
KRONEN supported cutting-family reference. Confirm preparation, fruit support, blade and desired cut with actual lemon; segment separation and extraction are distinct duties.
For rounds and wedges, agree end trimming, seeds, thickness and juice loss. The general cutter image illustrates a supported feed family, not a verified lemon fixture. Extraction has a different machine interface: select fruit presentation and the required separation of peel, seeds and pulp using the actual lemon lot.
Sorting: define classes before choosing sensors

UNITEC UNICAL 600
UNITEC mandarin handling photograph. For lemon, confirm actual fruit dimensions, supports and grade decisions; related layout is not an identical supplied line.
Grade the real elongated shape, size and external defects rather than treating every citrus fruit as round. The official lemon film explains presentation, while the mandarin photo is a related layout reference. Ask for the offered lemon programme, supports and measured class decisions in a supplier trial.
Dewatering: remove surface water for the next operation
Drain washed fruit before slicing, zesting or packing as appropriate. Check water trapped at ends and contact points after holding. Water removal should not be confused with concentrating juice or drying zest into a shelf-stable ingredient.
Packaging: match the packer to whole fruit or ingredients

UNITEC citrus collection
Sorted citrus collection before final packing. Confirm the actual lemon package, filler and transfer height; this is not a complete sealer.
Whole lemons need count or weight control and a pack suited to their shape. Zest, slices and juice require separate ingredient or liquid dosing. The citrus collection photo shows an upstream interface, not a complete lemon packer or a bottled-juice line.
Inspect elongated lemons at the roller-transfer interface
UNITEC identifies this historical lemon processing and sorting line. It complements the distinction between intact lemon grading, zest removal and juice preparation. The film is not a zesting demonstration, an extractor or evidence of the current offered sensor package.

Current manufacturer links and source identity were checked. Confirm the offered version and configuration separately from historical demonstration footage. No crop capacity, yield, cleaning, damage or shelf-life guarantee is inferred from the film.
Prepare a lemon equipment trial brief
- Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
- Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
- Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
- Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
- Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.
Questions before choosing lemon equipment
Can one citrus machine deliver whole packs, peeled segments and bottled juice?
These are separate routes. Agree the retained product first, then specify the washing, preparation, extraction, finishing and packing interfaces required for that route.
