Crop guide · Date preprocessing
Start with the retained product
Compare whole fruit, prepared edible portions and processed ingredients before combining machines. Attributed equipment and process images below explain the different duties; actual fruit, tooling and accepted output remain part of the supply specification.
Compare washing, trimming or peeling, cutting, sorting, dewatering and packaging below. Attributed manufacturer images explain equipment roles. General family references require the actual crop configuration and a representative trial.
Choose the finished-product route
Whole dates
inspect and clean according to the incoming fruit condition, classify and pack.
Compare actual input and accepted output before choosing the line.
Pitted whole fruit or pieces
prepare, remove pits while retaining the required form, inspect and portion.
Compare actual input and accepted output before choosing the line.
Paste or syrup
prepare dates, rehydrate where specified, separate pits and pulp, then refine or clarify for downstream filling.
Compare actual input and accepted output before choosing the line.
Agree pre-cleaning, trimming, cutting and final-wash order for the incoming material and intended use. These routes are specification aids, not universal process settings.
Washing: match cleaning to the destination

Bertuzzi
Soaking or rehydration in a syrup processing route. This is not a universal washing step for intact snack dates; treatment details require an actual product specification.
Whole-date cleaning and deliberate soaking for syrup are different operations. Match the method to actual fruit condition and finished product. Bertuzzi describes soaking ahead of its syrup line; that step should not automatically be inserted into a whole-date retail route.
Trimming: separate peel, seed and shell decisions
Whole packs may retain pits. A pitted snack requires intact flesh as the acceptance target. The Bertuzzi processing example separates pits after soaking for syrup; it does not establish an intact-fruit snack-pitting result.
Cutting: choose pieces, reduction or extraction

Bertuzzi Creamer
The date application separates pits and pulp in an ingredient route. Do not assume it delivers intact pitted snack fruit; clarify accepted pulp and residual fragments.
Choose retained whole pitted dates, pieces, paste or syrup before selecting reduction and separation. In the illustrated ingredient route, a Creamer-family unit performs processing separation. Confirm the actual feed state and accepted pit fragments with the proposed configuration.
Sorting: inspect the retained product
Whole-fruit grading addresses agreed size and visible-condition classes. After pit removal or reduction, inspect residual pit material, unwanted tissue, texture and useful rework separately. Do not infer automatic fragment detection from a pitter image.
Dewatering: distinguish water removal from processing
Drain cleaning or soaking water only as required by the next process. Syrup filtration and concentration change the product; they are not simply a drying step for whole dates. Keep retained syrup, solids and waste streams distinct.
Packaging: match the feeder and final pack

Bertuzzi
A narrow source photograph of bulk filling. This illustrates a downstream ingredient-pack interface, not an intact-date retail packer or independently validated preservation process.
Whole-fruit packs, paste portions and bulk syrup require different feeding and filling equipment. Confirm sticking, portion control and closure. The illustrated drum filler belongs to a designed ingredient-processing route, not whole-date weighing.
Compare the actual retained product in a supplier trial
For date, ask the maker to demonstrate the intended whole-fruit, prepared-piece or ingredient route. No unrelated generic film is substituted here. The equipment photographs and written source descriptions explain the roles without requiring video playback.
Prepare a date equipment trial brief
- Bring representative input: variety, maturity, size, incoming condition and seasonal variation.
- Show accepted and rejected samples: retained skin, leaf, stem, head or cut form, useful rework and finished pack.
- Record useful output: trim/peel loss, damage, fines, missed defects, free water and rejected packs.
- Test interfaces: product supports, drops, screens, drainage, dose control, stops and restart.
- Confirm supplied configuration: safe access, guards, tooling, water circuits, utilities, cleaning and training.
Questions before choosing date equipment
Can one machine perform all date preparation stages?
Compare the required input and retained output at each interface. Whole-fruit handling, opening, peeling or seed removal, cutting, refining and packing are separate duties. A machine photograph is not evidence of a complete processing line.
